A strigel is used to maintain and create maximum knife edge sharpness. Strigel is easy to use and if used after each use of the knife, the sharpness will be maintained for longer and it will not be necessary to sharpen the knife as often with other coarse sharpening tools, such as a diamond sharpener. To use strigel, place the edge of the knife against the leather and pull the knife toward the spine of the knife (away from the edge). Repeat the procedure about 20 times on each side. One side has a rougher surface and the other a finer one. On the rougher side, you can apply abrasive paste if you want to increase the sharpening effect. Casström boards are handcrafted from 3.5mm thick vegetable-tanned Italian leather and have a waxed European oak core.
