When separating slightly larger cuts, it is clearly advantageous to have a longer blade: it provides a more uniform and cleaner cut. This knife works excellently for filleting fish – the narrow but fairly rigid blade cuts precisely along the entire length of an eight-kilogram salmon.
F2, F3 and F4 are high-quality knives designed for opening, butchering and cleaning fish. They are based on the well-shaped and secure F handle, and for this we have developed three blade shapes, each adapted to its own special purpose. Unlike many other manufacturers, we persist in using really good edge steel and even if this results in products that are 5 or 10 times more expensive, we feel the concept is right.
A cheap boning knife is characterized by poor edge retention, which leads to it being quickly sharpened to destruction, while one of ours can be used for decades. Not only does this lead to good overall savings, but it also offers job satisfaction and security. Naturally, it shouldn’t be stored after hunting, but it can also be used in the kitchen.
