The Alpha chef’s knife is the largest in the CMT family. Performs very well for cutting meat and general use. It has a very wide blade and the handle is in a high position to keep your fingers from crushing the chopping board when cutting.
About the CMT series The CMT (Character, Morse, Telephony) series stands out as one of the most exclusive chef’s knives ever made. With over thirty years’ experience in knife steel technology, we chose to use a cobalt-rolled steel. It’s a steel that has proven to be both strong and very sharp. In addition, we have added a convex edge, which is both sharp and resistant, also the result of our long experience in knives. To obtain a tight and hygienic joint between the guard and the blade, we weld the guard to the tang with a special electrode and then grind it into an elegant profile. To this we have added exceptionally beautiful ivory to ensure a handle that will last as long as the blade. It’s obvious that these knives are entirely handmade – no machine can produce such beautiful knives!

How should I best care for these knives? To begin with, we recommend that they are not used for cutting frozen meat or bones. If you do, you risk having a broken or bent edge, despite the high quality. Cold makes steel brittle and this also applies to the most exclusive steel. A chef’s knife isn’t great for heavy chopping either, instead use a tempered saw with a tooth point or a cleaver. Finally, never put a nice knife in the dishwasher, this will considerably reduce the life of the knife and can ruin the edge. Make a habit of washing your knife by hand and letting it dry before putting it back.
How do I sharpen CMT knives? We highly recommend our diamond steel sharpener. Our experience is that they quickly develop a very good edge. Diamond sharpeners can be a little rough at first, but improve after a period of adaptation. If you just want to adjust the edge, we recommend our ceramic sharpener which removes significantly less steel but gives you a really sharp edge. The best is probably a combination of these sharpeners, which will also last for several decades.
